A slight twist on a classic, refreshing basil adds a savoury note to this favourite mixed drink.

Juice of 1 lime
1 spring basil
1 tsp sin-kō-nah tonic syrup
150ml soda water
Pour the gin, lime juice and sin-kō-nah tonic syrup into a tall glass. Add the basil and muddle for 30 seconds.
Fill 3/4 of the way with ice cubes. Fill the remainder of the glass with soda. Garnish with a bunch of basil and a slice of lime.
